Eggs are an excellent nourishing food source with many uses in cooking. However, increasingly, people are looking to exclude this ingredient from their food basket. The reasons behind this are varied; eggs are a common food allergen, i.e. a trigger of allergic reaction, and also are the cause of food intolerance in many people. Others seek to limit their egg consumption to control cholesterol intake (although the thinking about dietary cholesterol is undergoing a major review at present) or to exclude them completely for ethical or religious reasons. Whatever the reason, there is a real and growing interest in egg free recipes.
