Smoked duck with apple and chocolate

Ingredients

  • 30 g / 1 oz Rocket leaf (Arugula)
  • 1/2 Eating apple (choose a tart variety e.g. Granny Smith)
  • 150 g / 6 oz Smoked Duck Breast  (thinly sliced)
  • FOR DRESSING 
  • 50 g / 2 oz NESTLÉ Dessert Chocolate (or Nestlé Chocolatier)
  • tbsps Olive oil 
  • tbsp Cider vinegar 
  • tsp Honey 

Preparation steps

  • Roughly chop the rocket/arugula leaves and the apple (removing and discarding the core and seeds)
  • Take two slices of duck breast and make a strip by overlapping one of the short sides. Try and make one long side of the strip as straight as possible.
  • Place a small amount of apple and rocket at one end of the strip and then carefully roll up. Stand the roll upright on a serving platter. Repeat with the remaining duck, apple and rocket/arugula.
  • To make the dressing finely grate the Nestlé Dessert or Nestlé Chocolatier. Whisk together the grated chocolate, olive oil, cider vinegar and honey to give a thick dressing.
  • Drizzle a few drops of dressing into each of the rolls or serve separately to be added as desired. Serve immediately.
