Shortcrust pastry
The basic recipe for plain pastry. Can be used for pies, pastries, tarts and quiches.

Ingredients
- 225 g / 2 cups Plain flour (All purpose flour)
- 100 g / 1/2 cup Butter, unsalted (or shortening)
- Ice cold water
- Salt
Preparation steps
- For the pastry. Sift the flour into a bowl and stir in a pinch of salt.
- Cut the butter or shortening into small pieces and add to the flour. Rub or cut in until it resembles breadcrumbs.
- Gradually add enough water to make a soft but not sticky dough. Turn out on to a floured board or work surface and knead or work lightly until smooth.
- Flatten into a round disk, wrap in plastic food wrap and chill for 30 minutes.
- Use as directed in your recipe.
