Tomato tart with pesto pastry
Basil flavored pastry is a great partner for the tomato filling of this tart.

Ingredients
- 225 g / 2 cups Plain flour (or All purpose flour)
- 100 g / 1/2 cup Butter, unsalted (or other suitable shortening)
- 2 tbsp / 2 tbsp BUITONI Pesto alla Genovese
- Ice cold water to mix
- 250 ml / 1 cup Sour cream (or reduced fat sour cream)
- 2 large / 2 large Eggs
- 3 medium / 3 medium Tomatoes
- 8 Cherry tomatoes
- Salt and pepper
- Basil leaves to garnish (optional)
Preparation steps
- Place the flour in a bowl, add a generous pinch of salt. Cut the butter or shortening into small cubes. Add to the flour and rub or cut in until the mixture resembles breadcrumbs. This can also be done in a food processor. Stir in the BUITONI Pesto and enough water to make a soft but not sticky dough. Turn out on to a floured surface and knead or work briefly to combine the mixture thoroughly. Pat the dough in a flat disc and chill in refrigerator for 30 minutes.
- Roll out the pastry and use to line a 22cm/9inch flan tin or pie plate. Chill the case whilst the oven is heating. Pre-heat the oven to 200°C/400°F.
- Prick the base of the pastry case with a fork. Line with baking parchment or kitchen foil. Fill with baking beans or weights. Bake at 200°C/400°F for 15 minutes. Carefully remove the parchment and baking beans. Return the case to the oven for a further 5 minutes. Remove the case from the oven and reduce the temperature to 180°C/350°F.
- Beat together the sour cream and eggs until well blended. Season well with salt and pepper.
- Pour sour cream mixture into the baked pastry case. Slice the regular tomatoes and cut the cherry tomatoes in half. Arrange the tomatoes on top of the sour cream with the cut side of the cherry tomatoes uppermost.
- Bake at 180°C/350°F for 30-35 minutes or until set and lightly browned. Serve hot or cold. Garnish with a few basil leaves if desired.
