Emmental and ham quiche
A classic cheese quiche made with the distinctive Swiss Emmental cheese. Recipe from Nestlé France.

Ingredients
- 225 g / 2 cups Plain flour (or All purpose flour)
- 100 g / 1/2 cup Butter, unsalted (or shortening)
- Ice cold water to mix
- 2 large / 2 large Eggs
- 250 ml / 1 cup CARNATION Evaporated milk
- Ground nutmeg
- 100 g / 1 cup Emmental cheese (grated)
- 100 g / 4 oz Ham, cooked (cut into small cubes)
- Salt and pepper
Preparation steps
- Place the flour in a bowl with a generous pinch of salt. Cut the fat into small cubes and add to the flour. Rub in using your fingers until the mixture ressembles breadcrumbs. Add enough water to make soft but not sticky dough. Turn out on to a floured surface. Knead or work gently until the dough is well combined. Put in the fridge to chill for 30 minutes.
- Pre-heat the oven to 200°C/400°F. Roll out the chilled pastry and use to line a 22cm/9inch flan tin or pie plate. Prick the base of pastry, line with baking parchment or foil and add baking beans or weights.
Bake blind for 15 minutes, remove the baking beans and bake for a further 5 minutes.
- Allow the pastry case to cool whilst preparing the filling. Place the eggs and CARNATION evaporated milk in a bowl and beat together. Season well with salt and pepper and a generous pinch of nutmeg.
- Sprinkle the ham cubes over the base of the pastry case. Pour the egg mixture over the ham and then sprinkle over the grated cheese.
- Return the quiche to the oven and bake for a further 15-20 minutes or until the filling is just set and golden brown.
Serve hot or cold.
