Lemon and lavender bars
These teatime delicacies evoke dreams of Provence with a gentle flavoring of lavender and lemon. The pastry style base is pressed into the tin so does not require a rolling pin.

Ingredients
- 125 g / 1 cup Plain flour (or all purpose flour)
- 100 g / 1/2 cup Butter, unsalted
- 2 tbsp / 2 tbsp Icing sugar (or powdered sugar)
- Dried Lavender
- LEMON TOPPING
- 1 can (397g) / 1 can (12oz) NESTLÉ CARNATION Sweetened condensed milk
- 2 Eggs
- 125 ml / 1/2 cup Lemon juice, fresh
- 1 tbsp / 1 tbsp Plain flour (or All purpose flour)
- 1/2 tsp / 1/2 tsp Baking powder
- 1 tbsp / 1 tbsp Lemon zest (finely grated)
- Icing or powdered sugar to serve
Preparation steps
- Pre-heat the oven to 180°C/350°F. Place the flour in a bowl. Cut the butter into small pieces, add to the flour and rub or cut in until the mixture resembles breadcrumbs.
- Stir in two tablespoons of icing sugar/powdered sugar and 1 teaspoon of dried lavender. Tip the mixture into an ungreased 20 cm/8 inch square baking pan. Press onto the base of the pan to make an even layer.
- Bake for 15 minutes at 180°C/350°F.
- While the base is baking place the NESTLÉ CARNATION Sweetened Condensed milk in a bowl with the eggs. Beat together until fluffy.
- Beat in the lemon juice, flour and baking powder until blended. Stir in the lemon zest.
- Take the crust from the oven and pour over the lemon filling. Bake for 15-20 minutes or until the filling is set and lightly browned.
- Allow to cool in the pan on a wire rack. Refrigerate for 2 hours. Cut into 12 or 16 pieces as desired. Sprinkle with icing sugar/powdered sugar/before serving.
